I started with the cakesicles as these are my favorite, they are delicious and always the first to get eaten. These Cakesicle molds are only $10! Then buy cake mix and a tub of Buttercream frosting at Target for under $5. For the outer layer I used Ghirardelli white melting chocolate (also from Target) for about $5 and added food coloring and sprinkles from Hobby Lobby. All said and done I made these cakesicles for a little over $20!
**Tip: There is so much extra batter from the cakesicles that I took some of the batter and poured it into cupcake tins to make cupcakes too! That way you only buy one cake mix box and make two different kinds of treats! I used Mini Oreos on the top for the ears.
Directions:
- Bake cake according to box and wait for it to cool. Crumble the baked cake in a large bowl and add 1/2 cup of the buttercream frosting and use your hands to knead it together. it should be pretty sticky, if it looks too crumbly go ahead and add a little more frosting.
- Now grab your molds. you will want to melt the white Ghirardelli chocolate in the microwave 30 seconds at a time until completely melted. Add food coloring if you want.
- Take small spoon and coat the molds, make sure to get up on the sides all the way! I like to do all four molds and then go back and add just a little more to make it thick. If the layer is too thin, it will crack as you try to take it out of the molds.
- put the molds in the fridge for a few minutes to make sure it gets hard.
- Add the cake mixture to the molds. I like to make little ovals and VERY CAREFULLY press into the molds. Don't press too hard as it may crack the chocolate. Take a knife and scrape it across the top to make it flat.
- Push the popsicle sticks into the pre-made hole in the molds very slowly and kind of push on the cake as you do it.
- Take the small spoon again and put the last layer of melted chocolate onto the cake mixture. Put back into the fridge for a few minutes to let harden.
- Once it's hard, take out of the fridge. Pull the mold away from the cakesicle all the way down to the popsicle stick and try to carefully pull the cakesicle out of the mold. You can push on the bottom of the popsicle stick to help it out.
- If you wish, you can decorate the cakesicle with more melted chocolate and add sprinkles
Rice Krispies:
These treats were the easiest by far!
Ingredients:
- 6 Tbls butter
- bag and a half of mini marshmallows
- 1 tsp. Vanilla
- 6 c. rice krispies cereal
Directions:
- Melt butter over medium heat in large saucepan. Add 5 cups of Marshmallows and let melt completely, turning it down to low so that it doesn't burn.
- Once completely melted, add the vanilla, rice Krispie's cereal, and 1 cup of marshmallows. Stir until well combined.
- If adding food coloring, separate into bowls and add food coloring and stir carefully.
- Gently press into a greased pan.
- Let the bars cool down.
- Use the cookie cutters and press into the bars. **Tip: if using your hands, spray Pam on your hands to get them greasy, that way the bars won't stick to your hands!
- You can always roll up the extra and press down again to get as many bars as possible with the cookie cutter.
- If using the cookie cutters I used you can place the bows on top of the Mickey Mouse head to make Minnie Mouse.
